My job at Finnebrogue is always exciting! Every day is different – this week so far has consisted of
identifying exciting new ingredient suppliers and today talking to a conference room crammed with Booker Area and Butchery Managers. Hence the mess that is my desk this evening, littered with exciting new ingredients, food magazine clippings and Booker’s latest Catering Specials leaflet in which our consultant development chef Chris Burt features this month – talking of his respect for the Blackgate Signature brand.
With my butchery background it is always great to engage with other butchers, and these guys were certainly enthusiastic. Booker decided to launch a Blackgate Signature sausage range with us after the massive
success with Blackgate Signature Beef. I walked the room through our business history, focussing on our love of the land and food. I then got into sausage making production and we thoroughly enjoyed discussing people’s favourites because sausage is quite an emotive topic! Coarse or fine, thick or thin, flavoured or classic and so on! The new Pork and Leek, Armagh Bramley Apple and Kentish Cider and Honey Roast Pork were very much winners for butchery team at Booker Derby!
I had a thoroughly enjoyable day with the guys and can’t wait to meet more of them as we travel around telling everyone how tasty the new sausage range is. Made only with whole cuts of prime pork shoulder and belly, and deliciously gluten free too!

Plastic is a serious business and Finnebrogue Artisan is a responsible business. Here, the company outline it's progress to date on managing plastic within operations and food packaging: In 2019, Finnebrogue moved away from unrecyclable black plastic trays to 100% recycled and recyclable alternatives. In 2021, the company committed to two targets by 2025: 100% of packaging will be reusable, recyclable or compostable; and they'll have 50% average recycled content across all plastic packaging. Engagement with suppliers is ongoing - to help manage and reduce plastic coming into the factories. Jan - September 2022: Finnebrogue engaged Responsible Plastic Management Group to support their journey. The business recycled 20 tonnes of plastic, mainly from the tubs, lids and wrapping received from suppliers. This plastic was cleaned, shredded and granulated before being turned back into raw material for moulding. The business has introduced recycling bins across all departments in all four sites, which helps them to retain their zero to landfill success. Sourcing a recyclable film for trays (that's fit for purpose) remains a key focus for the food industry - and the business continues to engage with its suppliers to achieve this. Since the publication of its Sustainability Audit last year, Finnebrogue Artisan has been continually reviewing how it can become even more greener and leaner. As part of that journey, the business has commissioned Viltra to design the largest chemical separation treatment unit of its kind in Northern Ireland.
